Sure, you can add all sorts of other spices to mix, but I encourage you to try SPG first, and build on it as a base for those specialty BBQ Rubs.

  • Salt – In just about every BBQ rub or recipe you’ll see salt is ALWAYS the #1 ingredient. And you can’t use just any ol’ type of salt. Stick with course ground Kosher Salt, or course ground Sea Salt. No table salt here. If fact, go throw away all your table salt right now and never buy it again.
  • Pepper – Pepper is another ingredient that you’ll find in nearly every BBQ rub, especially if the rub is meant for beef. Pick up some course ground pepper, sometimes called “table grind pepper” or “16-mesh pepper“.
  • Garlic – You’ll want to be sure and granulated garlic and NOT garlic powder. It’s best to follow this rule of thumb with all your spices for BBQ rubs. The courser chunks help create that ‘bark’ on the meat that we all love so much.

The term “mesh” refers to the coarseness of the pepper, which can be small (like you see on the table of a restaurant) to large granules that you want to use in a BBQ rub.

The number refers to the size of the holes in the mesh screen through which the pepper passes while it is being ground. The higher the number, the smaller the pieces of pepper will pass through it.

You also can grind your own pepper from whole peppercorns, and if you have the time I would do that. It will yield a superior pepper flavor.

  • Add equal amounts of salt, pepper, and garlic to the bowl and mix well. Feel free to adjust the amounts of each ingredient.

Notes

This rub is my go-to for grilled meats and vegetables.  It’s fantastic on grilled chicken, or any type of green vegetable like asparagus and brussel sprouts.
